This dish was born out of a pun—and a summer-long obsession with corn. I’ve been eating so much of it and dreaming up every possible way to turn it into pasta, and this was by far my favorite experiment. It’s incredibly simple: corn, cheese, black pepper, and butter, with the corn butter as the star of the show. The corn butter is made by blending sweet corn and black peppercorns with chicken broth and a touch of butter, then straining it until silky smooth. From there, the magic happens: butter, pasta water, and plenty of grated cheese come together to coat the pasta in a glossy, gorgeous sauce that feels like liquid gold. To finish, the pasta gets topped with little crunchy kernels of toasted, buttery, peppery corn and, of course, more cheese for good measure.
