MOSTLY PASTA

Noodles

Keep frozen pasta in freezer. Do not thaw prior to cooking. Drop pasta into generously salted boiling water and give a good stir to unwind bundles of pasta. Boil for 2-4 minutes until the pasta is floating at the top of the pot. Always reserve a 1/4 cup pasta water to mix in with pasta sauce prior to draining. Drain pasta and DO NOT RINSE. Mix pasta with sauce and enjoy!

MOSTLY PASTA

Gnocchi & Stuffed Pasta

Keep frozen pasta in freezer. Do not thaw prior to cooking. Sometimes stuffed pastas may defrost slightly during transit which causes them to stick together slightly. For best results, gently pull pieces apart before cooking to prevent any bursting ravioli.

Drop pasta into generously salted boiling water and give a good stir to ensure the pasta doesn't stick to the bottom of the pot. Boil for 3-4 minutes until the pasta is floating at the top of the pot. Always reserve a 1/4 cup pasta water to mix in with pasta sauce prior to draining. Drain pasta and DO NOT RINSE. Mix pasta with sauce and enjoy!

Lasagna

Keep frozen lasagna in freezer. Do not thaw prior to cooking. Remove paper lid prior to cooking and preheat the oven to 400. Cover the lasagna loosely with tin foil and then place into preheated oven. Bake for 50 mins covered and then remove tin foil. Continue cooking 10-15 minutes until the cheese is golden brown and bubbling. Remove from the oven and rest the lasagna for 5-10 minutes prior to cutting.

Cream Based Sauces

Keep refrigerated. Heat sauce in in a pan over low heat until gently bubbling. Add in 1/4 cup of reserved pasta water and reduce to desired consistency. Add in drained pasta and mix. Enjoy!

Note: Heating a cream based sauce too quickly can cause the sauce to break meaning the fat starts to separate. Heat the sauce slowly and stir constantly to prevent breaking the sauce. In case of a sauce breaking, add in a tbsp of heavy cream and whisk vigorously to emulsify.

Tomato Based Sauces

Keep refrigerated. Heat sauce in in a pan over low heat until gently bubbling. Add in 1/4 cup of reserved pasta water and reduce to desired consistency. Add in drained pasta and mix. Enjoy!

Take-and-Bake Focaccia

Keep frozen focaccia in freezer. Do not thaw prior to cooking. Remove the plastic packaging and wrap tightly in tin foil. Preheat the oven or toaster oven to 400 and bake the focaccia for 25-27 minutes. Remove the foil and check that the bread is heated through. Toast for a few additional minutes to achieve desired color.
