Fire Roasted Tomato and Brie Pasta Sauce

- 12oz can of fire roasted tomatoes

- Medium sized wheel of brie cheese

- Handful of grated parmesan

- 1 small onion

- 2 cloves of garlic

- Salt and pepper to taste


1. Sauté onions and garlic in a pan with olive oil

2. Add fire roasted tomatoes and simmer on low for 10 mins

3. Puree mixture until there are no lumps

4. Carefully remove top rind of brie

5. Scoop out the cheese inside the brie rind, try to leave the rind intact

6. Melt the scooped out cheese and parmesan into the pureed tomato, onion, and garlic mix

7. Stir in your favorite pasta and serve inside the brie rind

Also great as a sauce on pizza!
