Banana Ice Cream with Chocolate Chunks

There's a homemade ice cream shop close to the house I grew up in that I've always considered the gold standard for ice cream. I learned to love banana as an ice cream flavor at an early age because of this shop. They had a weekly flavor rotation called "The Banana Corner" where each week a different variation of banana ice cream would be available until it ran out. My favorite was banana ice box cake which was a creamy banana ice cream base with graham crackers and chocolate fudge mixed in. I've tried to emulate the creamy natural tasting banana in this recipe, hope you enjoy!

For ice cream:

- 2 cups heavy cream

- 3 over ripe bananas, puréed

- 1/2 cup whole milk

- 3/4 cup sugar

- 2 tablespoons vanilla extract

- Pinch of salt

Mix ingredients and chill for 30 minutes before churning

For chocolate chunks:

- Semi sweet chocolate chips

- Coconut oil

Microwave for 1 min stirring every 10 seconds and then spread in a thin layer in air tight container. Refrigerate until hard and then break into small chunks

Churn ice cream and freeze for an hour then take out of freezer and mix in chocolate chunks and return to freezer
