Bolognese Sauce

Whether you're cuddling up with bae on a chilly day or trying to impress your parents, bolognese is a simple staple that will satisfy everyone.


- Package of sweet Italian sausage

- Can of crushed tomatoes

- Can of diced tomatoes with onion and garlic

- Half bag of shredded carrots

- One sweet onion

- Splash of red wine

- Two bay leaves

- Dash of oregano

- Dash of thyme

- Two spoonfuls of brown sugar

- Good pour of olive oil

- Two cloves of garlic

- Good parmesan


First brown your sausage in a pan until it smells amazing then drain and put aside for later. Next, pulse the carrots, onion, garlic in your food processor or chop very finely. Add a pad of butter to a hot pan and sauté the veggie mix until the onions are translucent. Then add the herbs except for the bay leaves and stir until the herbs are fragrant.

Add the sausage back into the pan and deglaze the pan with red wine. Reduce for 2 mins then turn the burner down to low and add the canned tomatoes and bay leaves. Mix the pot well and simmer the sauce for 1-2 hours covered.

After 1-2 hours, uncover, stir, and remove the bay leaves. At this point, taste the sauce and add a little brown sugar if needed, I like mine a little sweet. Finally, grate some good parmesan/add a parmesan rind to the sauce and simmer for another 10 minutes. Remove the rind after about 10 minutes and add a good pour of olive oil to finish.

Serve or store in fridge for up to 7 days or in freezer for up to a month.

This makes a loooooot of sauce but trust me, you'll use it on everything.
