How do I prepare my pasta once I receive it?

Every Summer Supper Club and Market Menu order comes with an instruction sheet detailing how to cook and store your pasta. Most pastas should be boiled in generously salted water for 2-5 minutes until they are floating at the top of the water. It is always helpful to taste a piece of pasta before draining it to make sure it is cooked. Sauces should be heated on the stove until gently simmering and we always recommend adding a little bit of pasta water to your sauce to help the marriage between pasta and sauce. When the pasta is cooked, drain it and DO NOT RINSE. Drop the cooked pasta into the simmering sauce and stir to combine, then plate immediately. Focaccia can be eaten at room temperature or warmed in a toaster oven.

How should I store my fresh pasta?

If you are not going to cook it within 24 hours of receiving your fresh pasta delivery you should FREEZE the pasta in an airtight plastic bag. The fresh pasta will keep in the freezer for up to a month and can be boiled directly from frozen, DO NOT THAW. Cooked fresh pasta can be stored in the fridge and eaten within 5 days.
