I’ve been eating so much of it and dreaming up every possible way to turn it into pasta, and this was by far my favorite experiment. It’s incredibly simple: corn, cheese, black pepper, and butter, with the corn butter as the star of the show. The corn butter is made by blending sweet corn and black peppercorns with chicken broth and a touch of butter, then straining it until silky smooth. From there, the magic happens: butter, pasta water, and plenty of grated cheese come together to coat the pasta in a glossy, gorgeous sauce that feels like liquid gold.
